This Irancy is grown in oak barrels, but it's done Domaine Verret style. Just like when thinking about your food pairing nor the dish or the wine should bully out the other. Well the use of oak casks is similar, it is made to bring out the best in the wine and should never overpower it.

It definitely has a powerful cherry nose, ripe and nearly candied cherries as they had been sautéed in a pan with a bit of sugar. More discreet notes of raspberry, redcurrant and wild strawberry then appear.With a few years being patient these aromas will evolve towards the rich roundness of morello cherry jam and brandied red berries. On the palate you can feel like entering a world of richness, finesse and elegance. The use of oak is never aggressive if even felt as it is completely integrated to the wine. It surely is supporting it, bringing it a step higher in the spotlight. It's length leaves you with morello cherry and almond souvenir to remember it by.

A Boeuf Bourgignon (Burgundian beef stew), a coq au vin (poultry slowly cook in a red wine broth) or duch fillets cooked with cherries will simply be delicious. It will also make stand out feathered game.
